A good coffee forecasting model starts with baseline day-of-week seasonality. Then it applies local multipliers:

  • Lookback window: Weight the last 4 to 8 same-day-of-week comps.
  • Factor overlays: Apply calibrated percentage adjustments (e.g. +35% for cruise ship days, -20% for severe rain at walk-up windows).
  • Recommended labor hours: Translate forecasted dollars directly into scheduled hours based on your target Sales Per Labor Hour (SPLH).
