Behind the counter, a delivery order takes more labor than a walk-up customer. Drinks must be poured, bagged, sealed with safety stickers, placed in drink carriers, and staged on a pickup shelf.
Then a delivery driver arrives, shoves a phone in front of a barista who is steaming milk, and walks out without a greeting.
On in-store counter orders, customers tip an average of 12.4%. On delivery apps, app customers tip the delivery driver, not the cafe staff. Baristas receive an average tip rate of just 0.4% on marketplace app volume.

The three channel strategies that protect margins
Coffee operators do not have to abandon delivery, but they must manage channel economics deliberately:
- →Channel-specific menu markups: Price delivery marketplace items 15% to 20% higher than in-store counter menus to offset platform commissions.
- →Drive pickup to first-party web orders: Promote Square Online or direct web ordering with counter pickup. First-party online orders average 8.2% tips and carry no marketplace commission.
- →Track channel share of total net revenue: Monitor weekly revenue mix to ensure high-commission delivery volume does not exceed 10% of total cafe sales.
